提要
曾担任过江苏省考古学会副理事长的考古学家朱江先生也是一位园林专家,他的《扬州园林品赏录》广受赞誉。朱先生还是一位资深美食家,在担任扬州大学烹饪研究所所长期间发表了一系列关于烹调文化、小吃文化、饮料文化、饮酒文化、茶文化的论文和著作,受到国内外学术界的关注。其中的《扬州饮食随想录》已流传至世界各地,反响热烈。
本书是《扬州饮食随想录》的姐妹篇,同样选自作者的《饮食三录》(1998)。朱江先生研究饮食文化多年,多次应邀出国访问、讲学和参加国际学术会议。朱先生品尝过世界许多地方的美食,他痴迷于一切有关饮食文化的事情,因而熟知各地很多餐馆的特色菜,知道在哪里能吃到各种最正宗的美食,能说出菜肴所需的最好配料,连某道菜单的来历都了如指掌。

Abstract
Prof.zhu Jiang, who once worked as the vice chairman of Jiangsu Province Archaeological Society, is an archaeologists and a garden expert. His works Appraisals of Yangzhou Garden has won extensive acclaim. Prof. Zhu is also a senior gourmet. When he served as the Director of Yangzhou Cooking Research Institute, he has written a series of essays and works on basic cooking culture, food culture, beverage culture, drinking culture and tea culture, all of which caught the eyes of the academic circles at home and abroad. One of his works Eandom Thoughts on Yangzhou Food and Drink has spread around the world and has arouseed enthusiastic respercussions.
This book is the sister title of Eandom Thoughts on Yangzhou Food and Drink, both of them are taken from the author’s works My Notes on Food and Drink(1998).
Mr. Zhu Jiang has been in diet culture research for many years. He was invited to go on tours, give lectures and attend international academic meetings abroad many times.
